Healthy Eating Colors to Head Start Families

Chef Estela WindWalker presented her vegan educational program ‘Healthy Eating Colors (HEC)‘ on March 22nd to Head Start and Early Head Start kids and parents for National Nutrition Month at EDUCARE,  United Way’s bi-lingual Center for Excellence in Early Education.

Educare of Miami Dade’s approx. 100 families were offered healthy vegan snacks (organic/gluten-free option) and super-healthy Pink Flamingo Smoothies, blended during the lobby demonstration, arranged by Health Coordinator,  Ashlee Chaney-Dennis.  Maria Mariposa, of Sisterhood Mujer Mariposa, assisted.

Chef Estela, EarthSave Community Outreach Educator, developed HEC to educate parents while appealing directly to childrens’ taste buds, emphasizing five super-healthy phytonutrient Food Color Groups with the slogan ‘Eat Like a Rainbow.‘ Her signature berry-banana concoction is sure to win over the Demonstration School’s kids.
