Shepherd’s Pie

Ingredients

  • 4 large potatoes
  • 1 T margarine
  • ½ cup soy milk
  • ½ t salt
  • 1 T extra virgin olive oil
  • 2 onions, chopped
  • 1 large bell pepper
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 2 cups mushrooms, sliced
  • 4 large tomatoes, diced
  • 2 cups kidney beans, cooked and drained
  • ½ t black pepper
  • ½ t paprika
  • 2 T soy sauce
  • Dice the potatoes, then steam over boiling water until tender. Mash with soy milk, margarine and salt. Set aside.

Instructions

  1. In a large skillet, sauté the onions, pepper, carrot and celery in oil for 3 minutes over medium heat.
  2. Add the mushrooms, cover the pan and cook an additional 7 minutes, stirring occasionally.
  3. Add the tomatoes, kidney beans, paprika, pepper and soy sauce, then cover and cook 10-15 minutes.
  4. Put the vegetables into a 9x13 inch baking dish and spread the mashed potatoes evenly over the top.
  5. Sprinkle with paprika.
  6. Bake at 350o for 25 minutes.
  7. serves 6
